You asked…. and I am delivering! These Broccoli Cheddar Soup + Garlic Parmesan Biscuit recipes are definitely one you need to try, especially now that Autumn is among us (my favorite time of year, by the way!) and the weather is getting chilly. PLUS… its a GREAT way of getting your kids to eat their veggies! What (lactose tolerant, lol) kid doesn’t love cheese?
Broccoli Cheddar Soup + Garlic Parmesan Biscuits
One of my favorite soups ever is Broccoli Cheddar! it’s in my top 5, for sure! It is thick, creamy, filling and always packed with flavor. It is super rare for me to ever have purchased a soup bowl of broccoli cheddar soup only to be dismayed. And, what is even better… is to pair it with these BOMB biscuits! I have never made biscuits from scratch before… and I was pleasantly surprised how easy it was, I honestly didn’t think I would pull it off. Mike is a biscuit fanatic and I was cringing as he tasted these… waiting to hear what was wrong with them.. and.. nope, he gave me nothing bad. In fact, he didn’t even say anything until he wiped his food clean off the plate. He then proceeded to say… “Okay.. this has GOT to be my new favorite soup and I am even more excited that it is started to get cold out, because I can eat this every day… and the biscuits were just perfect with it”. OMG, YAY!
So, I made this recipe, not only because it is my favorite soup… but because my mom had just recently had major oral surgery and is only allowed liquids this week and soft foods for the remainder of the month. I needed a few good options for her, because I am sure having only Ramen and canned soups every day is going to be hell for her. I asked the dentist if this was okay and she said it was perfect, and if anything, just to blend my moms portion so she doesn’t have to chew. So I did. She served herself a small cup of it and after tasting it, she hurried back and took the whole (well blended) large bowl I had set aside for her. And, she too came to me exclaiming how great this was. Unfortunately she was unable to try the biscuits tho…. another time, mom!
As with any recipe I make, I am here to tell you that you can always make it your own! I give you the basics and you go from there. For example, I ended up using the whole 12 oz bag of Trader Joes’ Cheese, not just 2 cups. But I did taste it before I added the rest and it was still amazing! (I just wanted it to be super gooey and cheesy) There is no need to add salt to the soup, the cheese and stock have enough. Feel free to use LOW-SODIUM BROTH for the same amazing results and lower sodium consumption! And, you can replace the milk with heavy cream if you desire a super thick soup! The biscuits can be made with cheddar cheese instead of Parmesan if that is your preference!

Also, keep in mind… places like Trader Joes or any supermarket already sell things like onion, carrot, broccoli etc already all diced and ready to use. If you know you need to make this recipe even faster and want to save lots of time… just buy everything pre-cut/chopped. And, yes… this can be made in a crock pot. I have not done this myself… but I would assume that like other Crock-pot soup recipes, you can just place all the ingredients and either put it on low for 6 hours or high for 2-3. However, I will test this and let you know once I do.
