Autumn is finally showing itself here in California! It’s finally – “Sweatta’ Weatha’! This means I get to break out my jeans, leggings, scarves and boots too! YAY! However – I am not looking forward to having to find out if my jeans and leggings still fit (‘doh). Yeah… yeah … I admit, I gained a few lbs in the summer. A few factors were involved here: 1. my decreased mobility due to my fibro and back pains and most importantly 2. my eating habits (eeek, I didn’t want to admit that, but it’s true).
I already know that the Holiday’s are super indulgent days for me (nope, I am not passing up Thanksgiving dinner – I don’t care what anyone says, lol) so therefore I need to change up some of my daily meals! With that all said, I introduce to you – The NEW Comfort Food.
What does that mean you may ask? It’s simple…
The New Comfort Food is:
I took a trip to my local supermarket and I picked up the freshest chicken I could find- Foster Farms Simply Raised chicken. What’s so great about it? Well, for starters Foster Farms Simply Raised fresh chickens are locally grown in California (and the Pacific North West) and contains NO Antibiotics (EVER)! Why is this important? Well, this means you get the freshest chicken (it’s 48 hours from the farm to the supermarket) and you don’t have to worry about the possible ill effects of antibiotics from the chicken. Fresh, all natural chicken that is American Humane Certified & fed a 100% vegetarian diet, without any hormones or steroids, ever! Did you know – According to Reuters, “Public health experts and federal regulators have grown increasingly concerned that [antibiotic] use could create a health hazard by spurring the creation of antibiotic-resistant superbugs in humans.” Eww… no, thanks!
So, now that I had my choice of protein all picked out, I needed my veggies! I love veggies, but I really am NOT eating enough of them and I need to change that! I took a stroll down to the veggie isle and picked up some of my favorites: zucchini, yellow squash and mini heirloom tomato’s. These are always the perfect complement to meats and chicken!
I got home and opened up the fridge..I was still pondering what exactly I would make and then I spotted some (yummy) balsamic vinaigrette and some feta cheese that I had yet to use. So with that, I had my “aha moment” and started creating my healthy family dinner.
“Balsamic Chicken Recipe”
This was all thrown together in 1 Skillet and cook-time was under 30 minutes! All I added was a pinch of (sea) salt and pepper to taste and lastly I realized I wanted something on the side. Instead of going with my daily “white rice” I decided to pair it with a “healthier” side – Whole Grain Couscous.
*The couscous was made separately – but only took about 5 minutes to make while the chicken was cooking. It is super easy to make, just follow package instructions. I added garlic powder to it to give that extra kick. Because y’all should know by now I am obsessed with garlic.
My boys, Isabella and my mom really liked this healthier version of our chicken dinner. In fact, I was asked why I did not make more for left-overs… HA! Usually (my boys) all hate when I have left-overs! I admit, Mike was the only one who didn’t serve himself the veggies (yes he picked out the chicken only), but he is not a huge fan of veggies… we are working on that, I will have him eating every veggie in no time. Just like I converted him to liking (and being able to handle) spicy food. #WishMeLuck
Some recipe side notes before we get started – The Feta is totally optional! But, it really is a super delicious compliment to the vinaigrette. The salt and pepper is “to taste”, you may find that you don’t need to add any depending on the Balsamic Vinaigrette you use! Don’t forget, Feta is salty as well, so taste before you add more salt. And lastly, should you decide you want to, you can always add a bit more vinaigrette once you serve the platter. However, taste it first so that you do not make it too salty!
