Pastrami Grilled Cheese
I wanted to share my master creation…. ok, well maybe not so much a “master creation” however it was a recipe I came up with when I just couldn’t decide on what to eat. And yes, I am sure someone else has possibly done it in the past and I am not the first, however It was new to ‘me’ and I felt like a mastermind and creative genius after I made it in my kitchen, LOL! So give me some credit here.
A few days ago I was craving a grilled cheese sandwich… however I was also craving a pastrami sandwich since I had recently just purchased a big pack of pastrami at Smart and Final. UGH! what to choose? So, having this inner tug-of-war with my tummy and my heart… I decided to be brave and courageous…. so I just combined both… Crazy, right? ha ha…
But in all seriousness, it was SUPER yummy! Isabella had some and also just went to town with it…she devoured it. Later that day I made some for Angel (minus the mustard, because he is anti-mustard… and I just do not understand that no matter how hard I try) and he reacted as if he just tasted the best thing in the world, but I thought maybe he was just stroking my ego. Then, about a night or two later, a few of his buddies came over and when they said they were hungry Angel said “you HAVE to try this” and he made some for them as well. The next morning he was telling me about how amazing those sandwiches are and how his friends also said it was the best idea ever… needless to say.. these really are BOMB!!!
I have added the recipe below, however when I initially made it, I was starving andI didn’t measure anything (ingredients or time, lol) and since I was only planning on eating and not necessarily blogging. I didn’t write down any approximate measurements either. I normally like to cook free-handed (just throw things together) and if I am going to blog a recipe.. I will usually have a notebook with approximate measurements I used as I go .. only because I am so used to adding whatever I am in the mood for which is sometimes not in an original recipe I am making.
Anyways, to make a long story short…. below are estimates ha ha…. Obviously you can add more or less of anything (cheese or pastrami) and you can get super creative and add things like onion, tomato, mushroom etc while sauteing the pastrami. You shouldnt need any oil or salt, the pastrami releases oil and is already salty. You can add the mustard the way I did (see below)… or you can skip it the way Angel did. (I LOVE pastrami with extra mustard! )
And trust me, when I say that this is a super simple recipe… it is! Easy and FAST to make. Perfect for a quick snack or lunch on any day. Perfect for all ages too! Pair it with your favorite tomato soup (ours is from Trader Joe’s…seriously try their Organic tomato soup) and make it a hearty lunch or dinner. I am actually craving both now that I write this. =)
