Easy Shrimp & Crab Ceviche Recipe
Angel has been asking me to make a ceviche and tamales for some time now. Since I didn’t really want to start the long and tedious process of making tamales (I make BOMB tamales, but it is way too hot to make them right now), I went with the ceviche. Now at least he satisfies one of the two cravings. ..and, I become cool mom again for a few days. HA! As soon as it was ready to eat and chilled, Angel scarfed down 4 bowls of it (yes, in 1 sitting). He then came to me and said it was amazing and “on point”. (Can i get a pat on the back for this momma?!?) The funny thing is, he doesn’t even really like seafood, but he LOVES ceviche.
Today, I wanted to show you how to make a super quick and tasty ceviche using “ready to use” salad shrimp and imitation crab. It is made exactly the same way as if you were to use the raw shrimp (or white fish), without the hassle of prepping and cleaning (de-veining) the shrimp yourself. Oh… and you don’t wait as long for the lemon to cure the fish! (Obviously, I am very impatient when it comes to my food, LOL).
Another good thing about this recipe… it was not expensive AT ALL. I purchased all necessary items at my local Ralph’s Super Market (aka Kroger). I really was expecting to spend much more than I did, since seafood tends to be pricier. Their store brand salad shrimp was only about $5.99 and the store brand Crab Flakes were approximately $3.00! I was able to serve approximately 8 heaping bowls out of this! If you serve this on tostadas or in a side platter (like salsa), you can definitely serve many more people at any get together, family reunion, pot-luck, tailgate party etc. It’s really a great deal and everyone will love it! If you have ever had ceviche, you may know that there are actually many different variations of it. Some use Tomato juice (or V8), some have avocado (yum), some even have sweet potato (which I actually have not tried yet). Typically ceviche is made with bite-sized raw shrimp or white fish (such as white Sea Bass … YUMM!) which is then tossed with onions and peppers and cured in lemon (sometimes lime) juice. No matter how you make it, at the end of the day ceviche is just one of those amazingly delicious and fresh meals that you will just LOVE.
You can eat ceviche as lunch, dinner, a mid day snack or an appetizer. The hardest part is dicing the ingredients. Sometimes, I like to fill a small bowl and get broken up tostadas or corn chips and eat it just as I would eat chips and salsa. Seriously, it’s SUPER GOOD!
For best results, once it is made let it chill overnight (giving it a nice long time to marinate in the lemon juices and pick up all the onion, cilantro and pepper flavors well) and serve it cold on a tostada, top it off with fresh avocado and/or your favorite hot sauce (i.e. Tapatio) and enjoy! However (if you are impatient like me) as long as you refrigerate it for about 1.5-2 hours it will still be fine. If you are using raw fish, make sure the lemon juice has cured the fish before eating (if you see raw shrimp… keep it chilling).
Before you make this, keep the following in mind: Just like in most of my recipes (minus baking recipes which I give more accurate measurements) all ingredients are ‘per your liking’ (A tu gusto). Especially, things like the lemon, salt and pepper. I never actually measure these ingredients… I free-hand it. Just always keep this in mind: It is easy to add more later (seasoning) but you can not take any OUT once it is made. Therefore, start with less and add as you go along. This is the best way to make it just right for your liking.
Oh yeah… and if you LIKE spice, simply do not remove the seeds from the jalapeno when you dice them!
