As a mom, I know that we all have those day’s where we think to ourselves “do I really need to cook today?” Those day’s where we think “I’m just gonna order a pizza because there is no way I have the energy to make something!” I feel ya!!! As much as I love to cook and create new meals, I too get really tired at the end of a long day! The other day I was just wiped out but I had not taken out any food from the freezer to prep for any meal. I knew I had to come up with something quick… and then I had an “ah -ha” moment.
I remembered about some premium canned chicken we had purchased at Costco. Yes, I know… at first you think… “Ewww.. canned chicken?” Yes! A while back we had gone to Trader Joe’s and as always we stopped by their tasting section. The menu that day was chicken quesadillas and they made them with their canned chicken. And trust me… it was GOOD. (I will have to make and post that recipe for y’all, soon! That’s another quick and super easy lunch or dinner recipe you will LOVE!)
For anyone who doesn’t want to use premium canned chicken for this – that’s fine! You can totally use leftover chicken or even cook and shred chicken from scratch, just know it will obviously take way longer. The canned chicken just honestly makes this meal SUPER quick and SUPER easy. I also like having it on hand in our pantry in case of emergency. Hey- California is due for an earthquake and God only knows how big that may be. Emergency food is always good to have on hand!
So, now I have to say – my FAVORITE BBQ sauce for this is Trader Joe’s Kansas City BBQ Sauce. to me, it tastes way better than all the other sauces out there.
Also – I do live using their BBQ Rub and Seasoning with Coffee & Garlic – This is OPTIONAL and I only really sprinkle a bit (about 1 tbsp) but I mean, this rub is great on just about anything. I’ve used it on meats, chicken, salmon etc. I love it! It used to be a seasonal Trader Joe’s item, but I have seen it in store this past year (since it was brought back – last season).
Remember, this goes well with ANY side you wish. I have paired it with salad and rice and I have also served it on a bun with slaw. (Coleslaw is amazing with this) It’s all up to you. and of course the best part is, this really only takes about 5 minutes to make and you are DONE!A 5 MINUTE BBQ Pulled Chicken Recipe? YES! Mike and the boys were so impressed and loved it. I’ve actually made it twice this week because they liked it so much! When I told them how simple it was to make, they were impressed. So trust me, your family WILL love it!
